Chickens Baked with Quince Paste and Prosciutto
(as prepared by Patrick and Stephane)
From New Food Fast by Donna Hay (Serves 4) (We made it for 8)

4 x 300g (10oz) small poussins (baby chickens) (We used chicken breasts)
4 bay leaves
2 tsps fennel seads
30g (1oz) quince paste (We used Membrillo paste--often in cheese section of store)
16 slices prosciutto
4 leeks, halved
olive oil
cracked black pepper and sea salt
1 cup dry white wine

Preheat oven to 475F. Place a bay leaf and some fennel seeds in the cavity of each chicken. Tie the legs with string to secure. Top the breast of the chickens with quince paste. Wrap prosciutto slices around the chickens and tuck under to secure. Place the halved leeks in the base of a baking dish and drizzle with a little olive oil and then sprinkle pepper and sea salt. Pour the wine into the base of the baking dish and then top the leeks with the chickens. Bake for 20 mins or until the chicken is cooked through. Serve with roasted leeks and steamed greens or a green salad.
