Dim Sum

Turkey Filling

ground turkey 1 Lb
12 water chestnuts, chopped
2 green onions
1 T soy
1 T cornstarch
oil
(makes ~90)

Stir fry turkey; drain, stir in everything else but oil. Cook as below.

Veggie filling

3 C shredded cabbage
1 can water chestnuts
4 green onions
2 carrots
2 T soy
1 T cornstarch
spices etc to taste
oil (makes 100)

Mix everything together. Heat oil in pan, make dumplings and fry about 2 min per side. Dip in following sauuces.
 

Chile Dipping Sauce

2T chopped garlic
2T fresh chopped chile
½ c fish sauce
sugar to taste
1/4 c vinegar
1/4 c lime juice
½ c water
2 T peanuts
2T shredded carrot

Sweet and Sour Sauce

1 part grape jelly to 1 part chile sauce

Hot Mustard

3 T hot mustard
2 T water
1 T soy
