Grilled Flank Steak with Hot Pepper Paste

Serves 4

2 pound flank steak
1/8 c honey
2 Tablespoon soy sauce
2 T rice vinegar
½ tsp sichuan peppercorns

Pepper Paste

6 roasted jalapenos, peeled
2 roasted ancho peppers peeled
1 roasted red pepper peeled
2 cloves garlic, chopped
1 tsp chopped parsley
1 tsp cumin powder
1 tsp balsamic vinegar
1/4 cup olive oil

Place the flank steak on a baking pan. In a small bowl mix together honey, soy sauce, vinegar and peppercorns. Run the mixture al over the flank steadk and refirgerate 2-24 hours.

For the pepper paste, palce peppersi na food processor and run the machine to chop the peppers. Add tejh remaining ingredients and process until smooth. Remve form the processor andrefrigerate until ready to use.

To cook the flank steak oil the greill then heat ust until youcan hold your hand over for no more than 5 second. Cookt he flank steak about 3-4 minuteson each side depending on thickness for rare to medium rare donennss. Remove from the heat allow to stand for 1-2 minutes then slice thinly on an angle. Serve hot pepper past on the side or on top.
