3 pkg cream cheese (8 oz each) at room temperature
1 t vanilla
1/8 t salt
1 c sugar
12 oz Ghiradelli bittersweet dark chocolate, melted and cooled
3 eggs
1 c sour cream
Chocolate-wafer crust (recipe follows)
whipped cream (well yes, you could put it on the cheesecake)
1. in a large bowl beat cream cheese until smooth
2. add vanilla, salt, sugar, beat til smooth
3. add chocolate, beat til blended
4. add sour cream, beat til smooth
5. spoon into crumb crust, smooth top
6. bake 1 hour in preheated 375 degree oven (center will be soft)
7. cool completely on rack, leave in pan, cover with aluminum foil
and
refrigerate overnight
8. take off all clothes, do something with the whipped cream and
enjoy the
cheesecake!

Chocolate wafer crust
Mix 1 cup of crushed chocolate wafers with 2 T sugar and 1/4 c
melted
butter. Press into the bottom of a 9 inch springform pan.
