Vegetarian Chili
as prepared by Bill DeGraff
(from "Moosewood Cooks at Home")

serves 4-6

1\2 cup bulghur wheat
1\2 cup hot water
one 28 oz can tomatoes

oil for sautéing
3 cups chopped onions
3 clove garlic, minced or pressed
1 teaspoon ground cumin (I use one tablespoon, sometimes more)
1 teaspoon "chili powder" (not hot cayenne or other hot chili pepper
powder, see below)
1 tablespoon hot sauce, or 1\4 teaspoon cayenne powder (obviously,  how
much you use is a matter of personal  taste.  The amounts shown here are
from the original recipe, and too bland for me.  Of course, you can use
fresh chilis.)

2 green bell peppers, chopped (I usually use one red and one green)
2 cups frozen corn, thawed
1 14 oz can black beans
1 14 oz can red beans
salt to taste

grated cheese and/or fresh cilantro for topping

Bring bulghur, hot water and the juice from the tomatoes to boil in a small
sauce pan, lower heat and simmer.
Sauté onions, garlic, cumin, chili powder and hot sauce/hot pepper powder
until onions are soft, then stir in bell peppers.  Run the tomatoes through
a food processor briefly, or just chop them in the can, and add them.  Stir
in the corn and beans, and simmer.  When the bulghur is cooked, but still
chewy, add it and any remaining liquid. Add salt, simmer a few minutes, and
serve with cheese and/or cilantro.
