Four Day Vodka Spinach

Serves 4. Based on the recipe from Greene on Greens. Modified only slightly by the addition of more lemon juice and vodka, and the removal of some of the butter. It doesn't come out looking like oh-so-chic sauteed baby spinach--it looks more like the overcooked goop you were served in the college cafeteria, but don't let it throw you. This is totally yummy and not as weird as it sounds. The vodka taste is muted, just there in the background.

2 lbs fresh spinach, rinsed and de-stemmed
7 Tbs vodka
1.5 sticks of unsalted butter
4 Tbs lemon juice
lots of nutmeg

Bring a big pot of salted water to a boil. Add the spinach. Stir in and turn off the heat. Let sit for two minutes. Drain, rinse with cold water and squeeze out excess water. Chop spinach. Melt a half stick of butter in a pan and add spinach. Stir until warmed through. Turn off heat and sprinkle 1 Tbs of vodka over the spinach. Let cool and put in the fridge. On day two repeat the process. On day three repeat but with only 2.5 Tbs butter. On day four repeat with last 2.5 Tbs of butter and remaining 4 Tbs of vodka. Add lemon joice and nutmeg to taste and serve immediately.
